Green Beans With Caramelized Onions And Pistachios

This French Green Beans with Caramelized Onions + Pistachios side dish will not disappoint. It is the perfect way to get your guest and children to eat their veggies! It is a great dish to dress up green beans for a holiday, special occasion, or dinner party. Please try this out.

INGREDIENTS

  • 500 g green bean
  • 6 liters boiling water
  • 1/3 cup salt
  • 2 large onion, sliced
  • 4 tbsp vegetable oil
  • pinch of Kosher salt
  • 1/2 cup blue cheese, crumbles
  • 1/2 cup pistachio, toasted

DIRECTIONS

Add the vegetable oil in the pan, swirl to coat, add onions to the pan and cook stirring frequently until onions caramelized about 20 minutes.  Add the rosemary and salt again cook for 1 minute. Remove onion mixture from pan and keep warm. 

 

Use a sweeter variety of onions with higher quantities of natural sugar, like yellow and white onions. Slice onions to thin uniform pieces, slicing. Avoid overcrowding when you frying onions. Fill a large pot with water, use generous amounts of salt. Water should taste as salty as seawater then add green beans in salty boiling water about 2 and a half minutes if necessary continue cooking until tender. Shock green beans in the ice water bath, so stop the cooking process.  

 

Return green beans to medium-high heat pan add oil and cook for 2 minutes until thoroughly heated, tossing to combine. Remove from heat sprinkle with pistachios, caramelized onion, salt, and pepper. Garnish with blue cheese. Serve immediately.
