An easy, fresh and super light Mediterranean watermelon salad with cucumbers, creamy feta, loads of fresh oregano, and a toasted pine nuts.
- 2 tablespoon pine nuts
- 28 oz watermelon
- 14 oz cucumber
- 4 springs of fresh oregano
- 1/2 a red onion
- 3 1/2 oz feta cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Olive oil
Toast the pine nuts in a dry nonstick frying pan on a medium heat until lightly golden, then remove.
Cut of the watermelon in cube, picked up any seeds.
Slice the cucumbers, gently dress with olive oil, salt and pepper.
Arrange the watermelon, cucumbers, and red onions on your plate. Sprinkle over the pine nuts, then pick over the oregano leaves. Crumble over the feta cheese and finish with pinch of salt and pepper.
