Caesar Salad With Blue Cheese

Classic Caesar salad with Romain lettuce, homemade croutons, easy Caesar salad with a creamy dressing. A great Caesar salad recipe gets its swagger from a great Caesar dressing recipe. 


  • 2 thick slices smoked bacon
  • 1 large egg, boiled
  • 2 slices of baguette, toasted
  • 1 tbsp olive oil
  • 6 leaf of Romain, no cut
  • 1 slice of blue cheese
  • 1 slice of lemon
  • salt, pepper TT
  • parmesan cheese to garnish

For Dressing

  • 2 large egg yolks
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon Mustard
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • 3 tbsp parmesan cheese
  • 1 clove garlic
  • salt, pepper TT



First simmer the egg for 5 minutes, drain and place the egg in cold water, peel, cut the egg in half.


Toast the baguette, slice with olive oil, place in the oven for 6 minutes until golden brown. 

Arrange the bacon in a single layer on a sheet pan and back for 20 minutes, until brown.

For dressing whisk in the egg yolks, lemon juice, and mustard. Slowly whisk in the olive oil and vegetable oil until emulsified. Whisk in parmesan cheese, season to taste with salt and pepper. 

Arrange the lettuce, bacon, boiled egg, and blue cheese artfully on the salad plate. Drizzle with the dressing. Sprinkle with salt and pepper. Add the fresh lemon slice, toasted baguette, and parmesan cheese. Serve in room temperature.
